Our family spent a lot of time in the Southwest of England learning what makes a proper Cornish pasty, and the answer is restraint. Beef, potato, swede, onion, salt and pepper, with butter added to the filling, enclosed in pastry we make from scratch and crimped completely by hand. No crimping machine, no tool, just thumbs. One is a meal. It is one of the most labour-intensive things we bake, so it tends to go early. Made from scratch in our Halifax bakery, seven days a week. Free-range meat from Oulton's in Windsor, Nova Scotia; local and Canadian ingredients wherever we can get them.
Enjoyed the pasties. Just like the ones I had in Cornwall decades ago.
How to heat it
Oven or air fryer until piping hot right through. Skip the microwave: it makes the pastry soggy.
