At the counter we call it both, because "bridie" means nothing to half of Halifax. A bridie is Scotland's pasty: seasoned ground beef and onion, folded in puff pastry and baked. Lighter than a Cornish pasty, with no potato in the way of the meat. If you grew up in Scotland you already know; if you did not, this is the one to start with. Made from scratch in our Halifax bakery, seven days a week. Free-range meat from Oulton's in Windsor, Nova Scotia; local and Canadian ingredients wherever we can get them.
How to heat it
Oven or air fryer until piping hot right through. Skip the microwave: it makes the pastry soggy.
